With "Tranci d'Autore", great Italian pizza is presented in a four-handed evening at IMperfetto in France. 
An event that celebrates contemporary Italian pizza through an exceptional four-handed evening: protagonists Manuel Maiorano and Tonino Cogliano, two of the most authoritative interpreters of the white art, who meet at IMperfetto to create a unique gastronomic experience. Maiorano and Cogliano guide guests on a sensory journey through evolved doughs, selected ingredients and innovative combinations: from pizza slices with cream of fior di ricotta, lemon thyme and French mimolette, to slices with San Marzano tomatoes, vegan stracciatella and pumpkin seeds with black sesame. Without forgetting the Moulin Rouge (fried montaranina) or the beef in the woods, finishing with the tarte au citron, a classic French dessert consisting of a crumbly shortcrust pastry shell filled with lemon cream. Making the evening even more meaningful was the presentation of the book Calici & Spicchi by Antonella Amodio, an editorial work that explores the increasingly topical dialogue between pizza and wine. The book represents an important contribution to contemporary gastronomic culture, proposing a new and informed approach to pairings, spanning territories, grape varieties, and identities. "Tranci d'Autore" is a journey into the world of the art of baking, where technique, research, and creative sensitivity blend to offer guests a refined tasting experience.
